The Diver Select OysterTM is an extraordinary oyster.

This oyster is hand selected by a highly trained and experienced team of divers. The Diver Select OysterTM is harvested in depths of water up to 35’ in the waters surrounding northern Long Island.  The harvesting process is exceedingly unique compared to the traditional methods of harvesting oysters, such as raking or dredging. By hand selecting the oysters, it eliminates any destruction to the shells or damage the meat inside.

Furthermore, this process of hand selecting oysters leaves the floor of the Long Island Sound undisturbed, so future oysters can spawn and begin their life process in a healthy bed of cockles. Our divers work in waters year round that range from temperatures of 80 degrees to nearly 32 degrees. The bitter and frigid conditions during the winter months that our divers face to harvest this oyster can become dangerous and life threatening.

A Difference you can See and Taste...

Diver Select OystersTM, which are deep cup oysters, contain much more salinity than Pacific oysters. The meat is described as clean, briny, smooth and sweet with a pronounced mineral finish. Diver Selects are generally crisper and brighter than Pacific oysters.
